The best carrot cake EVER?
A friend of mine tried to convince me to eat carrot cake! WHAT? Carrot Cake? Yuck! How could a cake with vegetables in be any good? Really!
All it took was that first bite
After one bite, yes ONE bite (it’s really THAT good), I was hooked! When you make and share this recipe as many times as I have, it becomes very easy to memorize! It became my “thing to bring” to work! We’re having a luncheon tomorrow! Is Wanda bringing carrot cake? And that happened all the time! AND it would be gone in one day! Why is that impressive? Because there were only 10 of us! Add to that, , it was usually over half gone after our morning break! I even had a boss that was retiring, ask for one as a gift from me!
Yes? Okay! Here it is:
- 2 cups of flour.
- 2 cups of sugar.
- 2 teaspoons baking soda.
- 2 teaspoons cinnamon.
- 4 eggs.
- 1 1/2 cups of oil.
- 3 cups of grated carrots. (For me, this is about 5 average sized carrots).
Mix everything except the carrots in a mixing bowl OR right in the cake pan. Stir in the grated carrots. Bake in a 9×13 pan at 350 degrees for 45 minutes.
For the icing:
- 1 box confectioners (10-x) sugar.
- 6 oz cream cheese.
- 6 tablespoons butter or margarine.
- 1 teaspoon vanilla.
- Enough milk to make it spread easily.
- Top with crushed cocktail peanuts.
There it is! Simple!
Of course, if you have a peanut allergy, you can always leave them off, or if you just don’t like peanuts, but like a different kind, I’m sure you could top it with whatever you like! Maybe even add raisins and nuts to the mix itself. I haven’t tried any of these variations, but I think they would be good! I personally don’t change it because I know this will always be eaten and I love it this way! Just a little side note, the saltiness of the peanuts takes away some of the sweetness of the icing. Experiment with your favorites! I’d love to hear what you’ve tried, any variations, etc! Share them here! Who doesn’t like a good dessert every now and then? But this one, I could eat every day! It’s that good!
