It’s that time of year again! Pumpkin EVERYTHING! And it’s funny that I only thought of this today! I wonder why we wait till fall to make pumpkin anything! I guess everything has it’s season, and pumpkin is fall! If you want something other than pie, then you just might want to try this one!
Pumpkin Torte Recipe
- 24 graham crackers, crushed.
- 1/3 cup sugar.
- 1/2 cup butter or margarine, softened.

- 2 eggs.
- 3/4 cup sugar.
- 8 ounces cream cheese, softened.
Mix these 3 ingredients together, pour over crust. Bake for 20 minutes at 350 degrees.
- 2 cups pumpkin. I use canned, but fresh pumpkin would work, too.
- 3 egg yolks. Set the whites aside.
- 1/2 cup milk.
- 1/2 cup sugar.
- 1 tablespoon cinnamon.
- 1/2 teaspoon. salt.
Mix ingredients well. Cook until thickened. Remove from heat and add 1 tablespoon unflavored gelatin (which has been dissolved in 1/4 cup cold water). Cool completely. Beat egg whites until stiff. Add 1/4 cup sugar, beat until stiff, then fold into the pumpkin mixture. Pour on top of cream cheese mixture. Spread with Cool Whip or serve with whipped cream on top. Garnish with crushed graham crackers, if desired. Refrigerate overnight, or for a couple of hours, if you’re serving it right away. It isn’t necessary to keep it refrigerated, it just helps everything set up!
Pumpkin season!
Yes, pumpkin season is usually a fall thing, but only because that’s when they are harvested. Canned pumpkin is always available, and if you’re really adventurous and have FROZEN pumpkin (or canned it yourself), then it is always ready and waiting for that pumpkin craving to hit!
There are a lot of recipes on Google and Pinterest. Search for your favorite and bake away! And now that I’m hungry for this, I think I’ll go make one so I can sit back and enjoy a piece along with a cup of coffee. Or maybe some Hot Cider, since it’s also THAT time of year!
